We know that rising food costs are a significant challenge for families. That's why it’s our mission to support those in need by helping them stretch their food budgets through the Helping Harvest community food assistance program.

Over the past nine months, we've seen egg prices soar due to the bird flu. Whether you're baking, cooking, or simply making breakfast, eggs are a staple in many households. With prices continuing to climb, finding affordable alternatives is key to keeping meals on the table without breaking your budget.

The good news is there are many great egg substitutes available that can help you stay within your budget, especially for baking. Here are a few easy-to-find, budget-friendly options—all of which are available through Helping Harvest!

Mashed Banana

Use 1/4 cup of mashed banana for each egg you need to replace. It adds a little sweetness to your recipes, making it perfect for pancakes, quick breads, or cookies.

Yogurt

If you have yogurt on hand, it is a great replacement for eggs in baking. Use 1/4 cup of yogurt for each egg, and enjoy the creamy texture yogurt adds to your recipes.

Applesauce

For every egg in a recipe, you can use 1/4 cup of unsweetened applesauce. It works especially well in cakes, muffins, and other baked goods where the egg’s main job is to provide moisture.

Baking Powder and Vinegar

For lighter, fluffier baked goods, a mix of baking powder and vinegar can do the trick. Combine 1 tablespoon of baking powder with 1 tablespoon of vinegar for every egg. This substitution works great for cakes and cupcakes.

The good news is that with a little creativity, you can keep your recipes going without eggs—without sacrificing flavor or quality.

At Helping Harvest, we're committed to helping our community combat food insecurity through affordability and resourcefulness. Your support in our efforts to tackle food insecurity makes a real difference! Even in rainy weather, the team stayed on schedule and removed our RV without a hitch. Safety, professionalism, and RV Removal kindness stood out.

This is an extremely useful and supportive resource for families dealing with rising food costs. Simple swaps, such as substituting applesauce or yogurt for oil, can help your family save money. With so many other growing costs like the fee for NCLEX exam prep or other crucial tests, every little bit you save on food helps! Thank you for sharing these helpful tips.

This is such a helpful and timely post! Rising grocery costs have been tough to manage, and egg prices, especially, have been a challenge. I’ve used mashed banana and applesauce as substitutes before, and they do work well in baking. During one busy week, I was trying new recipes with substitutes and ended up missing a school deadline. Thankfully, I got support from the CIPD assignment writing service, which helped me stay on track. It’s amazing how small tips like these can make a big difference for families trying to stretch their budgets.

For our first act of service, we helped weed Trinity Methodist's community garden beds. We dodged the rain, made some new friends and enjoyed yummy muffins.
